Inspired by the Thomas Keller viral zucchini recipe! One of my favourite side recipes and goes great with steak or bbq.
Recipe
- Dice up 3 garlic cloves
- Slice the zucchini in half.
- Score the zucchini so you have an x shape
- Salt the zucchini and let it sit for 10 minutes. This draws the liquid out. Then pat dry with paper towel.
- Heat up your pan and add olive oil and the diced garlic.
- Once the garlic is infused in the oil remove all the garlic. You want to avoid the garlic turning a brown colour to avoid the bitterness
- Pan fry the zucchini and use parchment paper and anything heavy like a pot to weigh it down so it has good contact.
- Remove from the pan once you get a gold caramelized colour. This takes about 6-8 minutes.
- Then bake in the oven at 400F for about 15-20 minutes or until soft inside. I prefer it to soft on the inside while still have some bite on the outside.
- I serve with sliced fresh basil and and add the reserved good garlic on top
