Ultimate Khao Soi

This Chicken Khao soi with homemade noodles was a huge hit at tonight’s dinner gathering. Using a mortar and pestle, I crushed toasted cardamom and coriander seeds, rehydrated chili peppers and salt. Next, in a frying pan, I toasted onions, fresh turmeric and ginger and added these components to the ground up spices to create a curry paste. Following, in a stock pot, I fried the curry paste and added coconut milk, homemade chicken stock along with palm sugar, soy sauce, and black pepper to create the ultimate Khao soi.
